Sinigang

Sinigang is one of our oldest dishes, with origins predating colonial times. It’s rooted in the use of sour ingredients like tamarind, kamias (or bilimbi), and guava, which were not only favored for adding a tangy punch to cooking but also used for preserving food. These naturally sour fruits were essential in enhancing flavor while extending the shelf life of dishes, making Sinigang both a timeless comfort dish and a practical meal in the past.

My brother and I were outside playing in the snow and it was getting dark. Even after my dad called us in to eat Sinigang for dinner, we still didn't wanna go inside. After we were finally willing to go inside, my dad locked us out of the house to teach us a lesson and I was eating the Sinigang, seasoned with my tears.
