Bangus, or milkfish, has long been a staple in the Philippines, prized for its ability to thrive in confined spaces, which makes it ideal for breeding in fish farms. In the province of Pangasinan, it has earned a special place as a local delicacy, especially in Dagupan City, which proudly holds the title of the "Bangus Capital" of the Philippines. Every year, the city hosts the vibrant Bangus Festival on April 30th, celebrating this beloved fish with a series of lively events that showcase its cultural and culinary importance.

Although known for being boneless fish, my mom would tell me to remove all the bones. I had this for lunch in elementary school and unfortunately took too long removing bones that it was time for recess and I didn't even get to eat it.
