This beloved rice porridge, is a fusion of Spanish arroz caldoso and Chinese congee, both of which were adapted to suit local tastes. Over time, it evolved, blending different elements of Filipino culture to create multiple variations of lugaw. While some people may refer to arroz caldo as lugaw, it’s important to note that lugaw is a broader term encompassing various Filipino porridges, including arroz caldo, champurrado, and lelot balatong, among others.

Growing up in Ohio, this was always perfect for cold weather. But I was also a little traumatized by this dish because I would accidentally bite into the ginger and start crying. Nonetheless, I grew to love it.
